  • 500 g unpeeled boiled potatoes
  • 100 g onion
  • 50 g smoked bacon
  • 3 tablespoons of clarified butter
  • 4 large eggs
  • 1/2 flat teaspoon of salt
  • 1/2 teaspoon of freshly ground black pepper
  • a small bunch of chives
  • 40 ml milk

How to make bauernfrühstück – farmers breakfast.

Finely chop the chives and place them in a bowl. Cut the boiled, cooled and peeled potatoes into thick slices. Cut the onion into fairly wide slices. Crack the eggs into a bowl, add salt, pepper and milk and beat everything with a hand whisk.

Put some of the butter into a larger pan, add sliced onion and bacon cut into small cubes. Fry over a medium heat for 4-5 minutes, then transfer it to a bowl.

Put another part of the butter in the same pan, melt it, then place some of the potato slices on it, fry them over a medium heat for about 8 minutes on both sides. Halfway through the frying time, turn the potatoes over to the other side. Finally, remove the fried potatoes to a plate.

Place the fried potato slices in the pan, pour the eggs with milk from the bowl, and sprinkle with the onion fried with bacon. Fry over a low heat for about 10 minutes. Serve warm.
