I made these pumpkin cookies last weekend.
They turned out very tasty and their preparation went smoothly.
They are very tasty and of course you can make them any time, not just for Halloween.
Christmas is around the corner so why not to try the recipe.
You can involve kids into the whole preparation process. They love this kind of fun 🙂
Ingredients for pumpkin cookies.
- 2 cups of flour
- 300 g of pumpkin puree
- 1 egg
- pinch of salt
- 3 spoons of caster sugar
- 1 teaspoon of baking powder
- 1 teaspoon of soda
- 1/2 teaspoon of ginger
- 1/2 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg
- around 3 extra spoons of flour
- 6 tablespoons of mixed almonds, pumpkin seeds, sunflower and cranberries
- 4 spoons of chocolate cream
- 3 spoons of butter or margarine
How to prepare cookies with jam.
Sift the flour into a bowl. Add salt, ginger, cinnamon, baking powder, baking soda and caster sugar. Mix them together.
Add pumpkin puree, eggs and margarine to the already mixed dry ingredients. At the end add the mixture of grains.
The dough is quite sticky so while forming cookies make sure to use additional flour.
Take a table spoon of cake mixture and gently flatten it on a hand. Put a bit of chocolate cream in the middle and close the cookie by forming a ball. Flatten the ball again slightly. Preheat the oven to 175 degrees Celsius. Bake for 40 minutes.
Good to know when making chocolate filled cookies.
I do not use canned pumpkin puree, I make my own by slicing a pumpkin into pieces and baking it in the oven. Once it is cold, I blend it.
The chocolate cream can be replaced by toffee cream or jam.
