Potatoes are one of the more popular vegetables. They are cheap, tasty and you can use them for a whole range of dishes.
Every year, I impatiently wait for the moment when new potatoes appear on the market.
I can eat them to the point of being stuffed. I usually serve them with butter and dill – that’s how I like them most.
New potatoes are best served whole, not as purees. This is because they do not have too much starch in them and a puree made from them like that would have a liquid consistency.
Fried potatoes are one of several variants, in which you can serve new potatoes.
Potatoes prepared in this manner can be be from any kind of potatoes, not just new ones.

Wash the potatoes, dry them, cut them up into small cubes and place them in a pot with water, add a spoonful of salt, and boil for 10 minutes.
Remove the potatoes from the water, drain the water from them and leave them aside for 5 minutes.
Pour olive oil into a frying pan, add whole garlic cloves, sliced chili peppers and rosemary. Fry over a low heat for 2 minutes then add the cooked potatoes. Season with salt and increase the fire to medium and fry until the potatoes are slightly browned.
You can serve the potatoes as an addition to meat or by themselves, e.g. with kefir or sour cream.
The potatoes I used were quite large and had a red skin. I did not peel them because the skin gave them an extra flavour.
I used a whole chili pepper. It was quite large and made the potatoes a bit too spicy for my liking. If you do not like very spicy dishes, use less.
