Cauliflower is one of those vegetables, which can be used to make more than just a soup.

If not a soup, then what can you make from cauliflower? Just a few options: you can fry it, bake it, roast it, prepare a stew, make pies or use as a non-traditional “couscous”.

I like when dishes made from cauliflower are slightly spicy, so I often add some kind of spicy pepper such as chili or jalapeno to them to achieve that taste.

The cauliflower fritters from the recipe below are also a bit spicy. The same goes for the cheese sauce, to which I also added some jalapenos.

Ingredients needed to prepare cauliflower fritters.

Fritters:

  • 1,2 kg cauliflower
  • 2 teaspoons of salt
  • 2 eggs
  • 20 dkg of plain flour
  • juice of 1 lemon
  • 20 dag cheddar cheese
  • 2 large garlic cloves
  • 1 small jalapeno pepper
  • 1 teaspoon of ground sweet paprika

Cheese sauce:

  • 15 dag of cream cheese, e.g. Light cheese
  • 1 clove of garlic
  • 15 dag cheddar cheese
  • 1 tablespoon of pickled jalapeno peppers

How to make cauliflower fritters with cheddar cheese sauce.

Fritters: Put the cauliflower in a pot, pour water over it and add a teaspoon of salt. Bring it to boil and keep on cooking for 5 minutes. Cool it down and chop it very finely. Put the cauliflower pieces into a bowl, add eggs, 1 teaspoon of salt, sifted flour, grated cheddar cheese, lemon juice, mushed garlic cloves, sweet paprika and chopped jalapeno peppers. Mix and set it aside for an hour.

After an hour, you can start frying the fritters. I used a non-stick frying pan for that.

Heat up the pan. Take a spoonful of cauliflower mixture, form it into a ball with your hands, then place it in the pan and flatten with your hand or a spatula (do not burn yourself). Fry on medium heat until golden brown on both sides.

Cheese sauce: put the cream cheese, grated cheddar, mushed garlic and finely chopped jalapeno pepper in the pot. Melt it on a low heat, stirring constantly until the cheese is completely melted and the ingredients combine to form a creamy sauce.

Serve the fritters with the warm, runny cheese sauce.

My non-sticky frying pan has been my best friend for some time now. I fry most dishes that require frying on oil on that non-sticky pan. If you do not have such a pan, fry the fritters in oil or bake them in the oven.

I added fresh jalapenos to the cauliflower mixture and pickled jalapenos to the cheese sauce. Of course, you can only use either for both parts of the dish.
