Egg and flour dumplings

Some time ago I posted a beef soup recipe on this blog.

I used dumplings for that soup, which I make at home quite often.

I do not know if everyone knows this recipe so I decided to share it with you.

These dumplings can be added to different kinds of soups. They are also a great addition to any sort of meaty dishes, especially stews.

The basic recipe contains only eggs and flour. However, a bigger variety can be achieved by adding herbs or paprika to the mixture.

Ingredients You need o make egg and flour dumplings.

  • 2 eggs
  • 10 tbs of flour
  • a pinch of salt

How to prepare egg dumplings.

Sift the flour to a bowl. Add beaten eggs and mix thoroughly. The dough should not be sticky and the consistency should be quite hard. If needed, add more flour. Shape the dough into a ball. Put it in the fridge for about 30 minutes. After taking it out from the fridge, immediately grate it on a grater with large mesh. Once ready, sprinkle with flour to avoid sticking.

Cook in salted boiling water for 2 minutes.

The dumplings can be put directly into the simmering soup by using a table spoon. If you choose this method of cooking dumplings, make sure to add a few tablespoons of cold water to the dough. It should have a smooth consistency, like sour cream.
