Curry is a well know Indian cuisine dish. Its base is a combination of spices such as ginger, turmeric and chili. Various spices can be used – all depends on the region from which the curry comes from.
You can combine vegetables, poultry, fish and seafood, as well as beef and mutton with the sauce. The most popular types of curry are vegetable and chicken ones.
Vegetable curry can be prepared with chickpeas, pumpkin, cauliflower, green beans, zucchini and potatoes. These are just some suggestions, of course, because the list of vegetables that can be used for this dish is very long. The recipe below is for a sweet potato curry with fresh spinach.

Cut the onion and place it in a pot. Add oil to it and fry for 2-3 minutes. Next, add minced garlic, chili pepper, sweet paprika powder, grated ginger, cardamom, tandori masala, turmeric and cumin. Fry for a minute and add the sweet potatoes cut into 3 cm thick cubes, water, canned tomatoes and salt. Simmer on a low heat until the potatoes are soft and begin falling apart. At that point, add fresh spinach, mix and keep on the heat for an additional 2-3 minutes.
Sprinkle the curry with freshly chopped coriander and fenugreek. Serve with rice.
The best is to buy canned tomatoes which are already chopped. If you get one which are not, either cut them or blend them first before adding them to the curry.
I added fresh ginger but you can also use powdered one.
The potatoes can be cut into larger or smaller cubes.
