Peanut cookies without gluten? Yes, please.

For the first time, I baked something based on peanut flour.

I opted for it because it is gluten-free and as you might know, I try not to eat gluten.

This does not mean, of course, that I do not touch the cakes that I bake. I have a tiny bit from all of them but I do not stuff myself with them.

Ingredients for peanut cookies.

  • 500 ml kefir
  • 1/2 soda
  • 2 tablespoons of peanut oil
  • 1 egg
  • 2 tablespoons of dry goji berries
  • 1/2 teaspoon of baking powder
  • 500 g of peanut flour
  • 5 tablespoons of Xylitol
  • a pinch of salt
  • 3 tablespoons of starch
  • 3 tablespoons of roasted hazelnut flakes
  • maple syrup for serving

How to make cakes from peanuts.

Pour the kefir into the bowl. Add egg, peanut oil and xylitol to it. Mix for two minutes with a mixer.

Combine peanut flour, starch, baking powder, baking soda, a pinch of salt, goji berries and 2 tablespoons of roasted hazelnut flakes in a separate bowl. Then, pour the dry ingredients into the wet ingredients. Mix thoroughly.

Line the baking tin with baking paper. Scoop cookies with a spoon. They should have a maximum thickness of one centimetre.

Sprinkle the top of the cookies with the remaining hazelnut flakes.

Put them in an oven preheated to 175 degrees Celsius. Bake for 30 minutes.

After removing from the oven, gently drizzle with maple syrup.

Good to know when making peanut cookies.

Xylitol is nothing but birch sugar. It can be easily replaced with ordinary sugar.
