Kefir muffins with fruits

Kefir is a dairy product made from fermented milk. It is a natural probiotic and it works great as a main ingredient of pancakes and muffins.

I remember how, in my childhood, we would sometimes eat boiled new potatoes with melted butter, freshly chopped dill and kefir for dinner. Today, that type of dinner is a rarity. It’s a pity, because on hot days such a dinner really is perfect.

I don’t eat kefir too often, the main reason being that I do not consume lactose. Unfortunately, I can get lactose-free version only in certain stores. During my last shopping trip, I bought two cups of kefir and decided to make something sweet with it. Muffins turned out to be the best idea, as they were the fastest to prepare. In addition to kefir, cherries and raspberries also landed in the muffins.

Kefir muffins

Ingredients for kefir muffins.

  • 320 g all-purpose flour
  • 150 g icing sugar plus extra for sprinkling the muffins
  • 1,5 teaspoon of baking powder
  • 1/2 teaspoon of soda
  • 1/4 teaspoon of sea salt
  • 1/2 teaspoon of grated orange zest
  • 1 egg
  • 210 ml kefir
  • 20 ml milk
  • 120 ml sunflower oil
  • 150 g cherries
  • 100 g raspberries

How to make kefir muffins with fruits.

Pour kefir and milk into a cup, and add the orange zest to it. Set it aside for 10 minutes.

Combine flour, salt, baking soda and baking powder in a bowl.

Pour icing sugar into a separate bowl, add the egg to it and whisk for a few minutes until the mixture becomes uniform and fluffy. At that point, gradually add milk with kefir to it, then pour in the oil. At the end of whisking, add the dry ingredients in small batches. Mix the ingredients well, but not for too long.

Next, add the pitted cherries and raspberries to the mixture. Mix gently.

Line a metal muffin tray with paper or silicone molds. Fill each mold with the muffin batter.

Put the tray in an oven preheated to 190 degrees Celsius for 25 to 30 minutes.

Sprinkle the baked muffins with icing sugar on top.

I used a muffin tray which had 12 muffin holes. I lined each with paper muffin cups.

You can replace the cherries and raspberries with any soft fruit of your choice.

Depending on how wide the muffin tray is, keep the muffins in the oven for 25 to 30 minutes. The middle of the muffins should be baked properly.
