Ingredients for khachapuri.

  • 500 g all-purpose flour + extra
  • 1 teaspoon of salt
  • 7 g instant yeast
  • 1 teaspoon of crystal sugar
  • 160 g lukewarm water
  • 160 g lukewarm milk
  • 1 tablespoon of olive oil

Filling:

  • 100 g grated mozzarella
  • 100 g feta cheese
  • 250 g ricotta cheese

Additionally:

  • 5 eggs
  • 2 tablespoons of butter
  • parsley

How to make khachapuri.

Pour lukewarm water, lukewarm milk, crystal sugar, instant yeast and two tablespoons of flour into the bowl of a kitchen mixer. Mix it then leave it aside for 10 minutes. After that, pour in the remaining flour, salt, pour in olive oil and knead the ingredients for 10 minutes at a low mixer speed. Cover the kneaded dough with a kitchen cloth and leave it to rise for over an hour, so that the dough can double in volume.

Place the risen dough on the kitchen counter, divide it into 4 parts and shape each part into a ball. Sprinkle the dough balls with flour and roll them out into cakes measuring 35 x 20 centimetres each. Lightly roll the edges of each cake towards the center, giving the cake a boat shape, then prick each of the formed boats in several places with a fork. Place the dough boats on a baking sheet lined with baking paper and leave them to rise for 15 minutes. Next, brush the edges of the risen dough with an egg beaten with a fork.

Place ricotta cheese, feta cheese and grated mozzarella in a bowl, and mix it with a spoon. Divide the cheese filling into 4 parts and spread them on the egg-brushed dough boats. Place the khachapuri in an oven preheated to 200 degrees Celsius and bake for 18 minutes. Then, remove them from the oven and make a hole in the cheese in the middle of each khachapuri, crack an egg into the hole and place a few pieces of butter here and there. Place the khachapuri baking tray back in the oven preheated to 200 degrees Celsius and bake for 6-7 minutes. Serve the baked khachapuri sprinkled with chopped parsley.
