Lumberjack Salad
The Lumberjack salad is inspired by one of McDonald’s most popular burgers in Poland, the Lumberjack burger. The chain releases a special edition of this burger every year before Christmas. In addition to the classic beef version, its offer includes other options, such as a version with chicken. The Lumberjack salad is based on the poultry version of this popular burger. In the Lumberjack salad according to the recipe below, in addition to poultry, you can also find iceberg lettuce, croutons, fried onion, cheese and bacon. The ingredients are combined with a delicious yoghurt sauce with mayonnaise, mustard and ketchup.
To prepare the Lumberjack salad with chicken, start by frying the poultry, making croutons and frying the bacon. Next, cut the lettuce and fried bacon, grate the cheese – if it is in one piece – and mix the sauce ingredients. Finally, combine all the salad elements, arranging them in layers. Ingredients for Lumberjack salad.
- 450 g chicken breast
- 200 g iceberg salad
- 3 slices of toast bread
- 2 tablespoons of oil
- 100 g slices of bacon
- 1/2 teaspoon of granulated garlic
- 100 g cheese
- 3 tablespoons of olive oil
- 4 tablespoons of roasted onion
- 1 and 1/2 teaspoons of chicken seasoning
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
Salad dressing:
- 3 tablespoons of natural yoghurt
- 3 tablespoons of mayonnaise
- 1 teaspoon of mustard
- 3 tablespoons of ketchup

How to make Lumberjack salad.
Pour oil into a large frying pan, add diced chicken breast, sprinkle with chicken seasoning and fry over medium heat for 10 minutes, stirring frequently. Cool the fried meat. Cut the toast bread into small cubes, spread it on a baking tray, pour olive oil over it, sprinkle with granulated garlic and mix. Place the tray in an oven preheated to 180 degrees Celsius for 12 minutes. After removing the croutons from the oven, cool them down.
Place thin slices of bacon side by side in a large frying pan. Fry for about 5 minutes, flipping once during frying. Let the bacon slices cool, then cut them into large pieces. Place the iceberg lettuce on a chopping board, then cut it into wide strips or large cubes. Pour the yoghurt into a bowl, add ketchup, mustard and mayonnaise. Mix well.
Spread half of the iceberg lettuce on the bottom of a medium-sized bowl and sprinkle it with half of the salt and pepper. Next, place the fried poultry, pour half of the sauce over it, then place the grated cheese on top of the sauce, then garlic croutons, and finally the rest of the iceberg lettuce, salt and pepper. Pour the remaining sauce over it, then spread the bacon pieces on top. Sprinkle with the fried onion. Store the finished salad in the fridge.

Good to know when making Lumberjack salad.
You can use any hard cheese in this salad. It can be Cheddar, mozzarella, Gouda or any other.
The bread I use for making croutons is toast bread. Both wheat toast bread and multigrain toast bread will work equally well in this recipe. Instead of baking in the oven, you can make the croutons in a toaster. Toast bread should first be toasted, cut into cubes, and only then mixed with olive oil and granulated garlic.
The salad ingredients can be prepared in advance and combined just before serving. Then the croutons will be crispy.
I use grainy mustard in this recipe, but you can use creamy mustard instead.
You can choose either mild or spicy ketchup. If you want the salad to be slightly spicy, use spicy ketchup.
