Ratatouille
Ratatouille is a dish based solely on vegetables, such as zucchini, eggplant, tomato, pepper and onion. The dish is seasoned with herbs such as basil and bay leaf. What to serve Ratatouille with? This dish tastes delicious when served as a main course with, for example, bread or rice. It is also a nice addition to meat such as chicken or minced meat, or to grilled cheese and pasta.

Ingredients for Ratatouille.
- 700 g eggplant
- 1 and 1/2 teaspoon of salt
- 200 g onion
- 700 g zucchini
- 4 big cloves of garlic
- 4 tablespoons of olive oil
- 200 g yellow pepper
- 200 g red pepper
- 500 g tomatoes
- 1/4 teaspoon of black pepper
- a bunch of fresh basil
- 2 bay leaves
- 1 teaspoon of fresh oregano
How to make Ratatouille.
Wash and dry the eggplant, cut it lengthwise into four parts. Next, cut the parts into medium-sized cubes, put it all into a bowl, add 1/2 teaspoon of salt and mix. Set it aside for 30 minutes, then squeeze out the excess water and place the eggplant on a baking tray lined with baking paper. Put the tray in an oven preheated to 200 degrees Celsius for 30 minutes.
Wash the zucchini, dry it and cut it in half lengthwise. Next, chop the halves into one-centimetre thick slices, mix with 1 tablespoon of olive oil and place them on a baking tray lined with baking paper. Put the tray in an oven preheated to 200 degrees Celsius for 30 minutes.
Put the diced tomatoes, 3 tablespoons of olive oil into a pot and cook for 5 minutes. Add paprika, finely chopped onion, mashed garlic, bay leaves, oregano, salt, pepper and roasted eggplant with zucchini. Simmer over a low heat for 30 minutes, stirring occasionally. At the end of the cooking, add the fresh basil and oregano leaves.

Good to know when making ratatouille.
The fresh herbs can be replaced with dried ones.
In ratatouille, you can often find two types of courgettes, green and yellow. Yellow is a bit less popular, and you can’t always get it in the stores. If you manage though, use both yellow and green zucchini.
