Cheese and sun-dried tomatoes spread
Sandwiches can often be very dry. A good way to avoid such situations is to use sandwich spread to moist them. You can prepare such spread from vegetables, fish, cheese or eggs.
Vegetables ideal to make spreads from are: eggplant, zucchini, pepper or tomato. If you prefer to use fish instead go for mackerel or smoked salmon. And when selecting cheese, opt for quark or cream cheese. I made the spread in the recipe below by mixing quark cheese with sun-dried tomatoes and fresh basil. I served it with warm beetroot rolls. You can find the recipe for those buns here: Beetroot buns.

Good to know when making cheese and tomato spread.
I used ground quark cheese. If you would like to achieve a creamier consistency for your spread, blend the ingredients in a blender.
