Ingredients for the best mini pizza.
Pizza dough:
- 400 g bread flour + extra for dusting
- 140 ml lukewarm water
- 100 g natural yoghurt
- 1/2 teaspoon of salt
- 5 g instant yeast
- 1 tablespoon of olive oil
- 1 tablespoon of melted butter, cooled
- 1 teaspoon of crystal sugar
Tomato sauce:
- 200 g tomato puree
- 1/4 teaspoon of freshly ground black pepper
- 1/4 teaspoon of salt
- 1 teaspoon of dried basil
- 1 teaspoon of dried oregano
- a pinch of crystal sugar
Additionally:
- 100 g mushrooms
- 250 g hard cheese
- 1 teaspoon of olive oil
- a pinch of salt
- a pinch of black pepper

How to make the best mini pizza.
Pour lukewarm water into a glass, add instant yeast, mix it and set it aside for 5 minutes. Put the flour sifted through a sieve into a bowl, add yeast dissolved in water, salt, sugar, olive oil, butter and natural yoghurt. Knead the dough for 8 minutes, then cover the bowl with the dough with a cloth and set it aside in a warm place to rise for an hour and 20 minutes.
While the pizza dough is rising, make the tomato sauce and fry the mushrooms. Cut the mushrooms into thick slices, then pour olive oil into a pan, add the chopped mushrooms and fry for 3 minutes. After that, add salt and pepper and continue frying for another 2-3 minutes. Set it aside to cool it down. Combine the tomato sauce with sugar, oregano, basil, salt and pepper in a bowl.
Place the risen yeast dough on the kitchen counter and divide it into 8 parts. Next, form each part of the dough into a ball, then sprinkle it with flour and roll it out into a 13-centimeter-diameter. It is best to work with half the dough at a time and keep the remaining part formed into balls in the refrigerator. Cover each rolled out piece of dough with tomato sauce, sprinkle with cheese and arrange the mushrooms on top. Set the mini pizza aside for 20 minutes to rise. Bake in an oven preheated to 200 degrees Celsius for 12 minutes.
