Raw red cabbage works best in salads. However, a salad made only from cabbage would be a bit boring, so it is worth combining it with other vegetables or adding fruit to it.

An essential combination is red cabbage with apple. Recently, however, I have discovered that when combined with pineapple, it tastes pretty good too. I made a salad, to which I added cabbage, pineapple but also celery and satay sauce. It turned out to be extraordinarily tasty.

Ingredients for red cabbage salad.

  • 300 g red cabbage
  • 200 g canned pineapple
  • 2 celery stalks
  • 1 teaspoon of lime juice
  • 1/3 teaspoon of salt
  • 3 tablespoons of satay sauce

How to make red cabbage and pineapple salad.

Shred the cabbage or chop it finely. Bring water to boil in a saucepan and add the chopped cabbage. Cover it and let stand for 20 minutes. Afterwards, pour out the water and let the cabbage cool down.

Place the cooled down cabbage in a bowl, add salt, lime juice, diced pineapple and finely chopped celery and mix them. You can mix satay sauce in with the cabbage or simply serve it on top of the salad.

Good to know when making red cabbage salad.

Both canned or fresh pineapple may be used for this salad.

I did not make the satay sauce myself as I had bought some from the shop. If you on the other hand, would like to prepare a simple homemade satay sauce, you will need:

  • 1 garlic clove
  • 1 small onion
  • 1 small chili pepper
  • 1 tablespoon of light brown sugar
  • 1 tablespoon of soy sauce
  • 2 tablespoons of peanut butter
  • 100 ml coconut milk
  • 1 tablespoon of oil

Chop the onion, press the garlic and put them all in a frying pan. Add oil and chopped chili pepper to them. Fry on a medium heat until the onion is tender. At that point, add sugar, soy sauce and caramelise for a few minutes. At the end, add peanut butter and coconut milk. Cook for a few minutes until the sauce thickens. Finally mix it all together.
